There is just something about the comfort of a gooey casserole that we all love. It’s even better when you find a casserole that combines some very nutritional elements into an appealing “comfort food.” This Spinach Pasta Yum Bake Recipe does just that!

 

This casserole is great because it combines the yummy elements of cream, cheddar and mozzarella cheeses with vitamin-rich spinach and tomato sauce.

It’s also extremely easy to fix.

Spinach Pasta Yum Bake

Ingredients:

1 lb. hamburgerSpinach Pasta Yum Bake ingredients

1/4 bell pepper, diced

1/4 onion, diced

3 cloves garlic, diced

1 can traditional spaghetti sauce (approx. 2 cans sauce + 1 can paste)

1/2 can diced tomatoes

1/2 teaspoon oregano

1 t. salt

1 package spiral pasta

1 bunch of fresh spinach (trim off stems) or 1 package of frozen spinach

4 oz cream cheese

1 t. olive oil

1/2 t. salt

1/2 t. pepper

1 cup shredded cheddar

1 cup shredded mozzarella

Instructions:

Preheat oven to 350 degrees.

Brown hamburger meat, bell pepper, onion, garlic, salt and pepper. Drain any excess fat. Add spaghetti sauce, oregano, diced tomatoes and salt to the hamburger meat.

While browning meat, boil pasta according to directions. When pasta is finished, drain and mix into sauce and meat.

In the same pot you used to boil the pasta, add 1 t. olive oil, spinach, and 1/2 t. oregano. Saute until spinach has lost half of its volume (if frozen,saute until unfrozen). Add cream cheese and stir until it is melted and well mixed.

Spinach Pasta Yum Bake serves 8

Pour noodle mixture into a greased 9×13 casserole dish. Spoon cream cheese/spinach on top of noodles in small piles. Then, use a spatula to swirl into pasta without completely mixing.

Cover with shredded cheese and tinfoil. Bake at 350 degrees for 30 minutes.
