These Italian popovers are an easy main dish approach to the bruschetta appetizer.

Ingredients
one package of 8" tortillas
1 lb. of hamburger
½ medium-sized red bell pepper (diced)
½ small onion (diced)
1 small jar of sun dried tomatoes
1 can of tomato paste (reserve 1½ tablespoons for the Bruschetta)
½ block (4 oz.) of cream cheese
4 oz. hard cheese (grated)
1 t. oregano
½ t. garlic powder
olive oil
5 plum tomatoes (diced)
3 garlic cloves (minced)
1½ Tb. Balsamic vinegar
remaining tomato paste
salt and pepper
Instructions
Brown the hamburger, bell pepper and onion. Drain off any excess fat. Add the sun dried tomatoes, tomato paste, cream cheese and seasonings to the hamburger. Add salt and pepper to taste. Stir over low heat until well mixed and melted. The mixture should be thick. If needed, add a small amount of water by the tablespoon.
Preheat the oven to 350 degrees. Lightly grease or spray the bottom of a 9 x 13 baking dish. Spoon the meat mixture onto a tortilla. Fold in the ends first and then the sides. Squeeze gently and place in the baking dish, seams down. Arrange the pockets side-to-side. Spread a light layer of olive oil over each popover.
Bake for 20 minutes. Take the pan out of the oven and flip the popovers. Spread a light layer of olive oil over the top. Bake for 20 more minutes. Remove from the oven and sprinkle grated cheese over the top.
Mix bruschetta ingredients and serve on top.
